I've been trying to satisfy my urge to make full-size cakes for a change. Also, I thought I'd better return to a couple of somewhat neglected vegan cookbooks on my shelf... And so, I decided to try my hand at a choc-raspberry hazelnut cake from
The New Vegan by Amanda Grant. A couple of weeks ago, it turned out slightly undercooked, and with all the raspberries and hazelnuts having sunk to the bottom of the pan. Second time round, today, I just mixed those ingredients into the top after I poured the mixture into the cake tin, and made the oven that little bit hotter (and I'd added some extra cocoa to crank up the chocolate factor a little). It turned out a lot better...

But still, what I really want is a really rich, dense fudgy chocolate cake. I hear good things about the Chocolate Raspberry Blackout cake from
Vegan With a Vengeance, so that's on my list. Any other recommendations?

I don't have any other suggestions as I too hardly ever make big cakes, but I've also heard awesome things about the cake from VWaV!
As one who was able to taste the cake, I can vouch for its flavour. I think drossolalia should continue to experiment, and I am willing to test-drive every result.

Chocolate, raspberries & hazelnuts?? Wow! I can certainly vouch for the raspberry black out cake from VWAV, it's my go to cake!
