New Zealand, the country that keeps on giving OR Hey look I made vegan meringues
By now, almost any vegan can tell you that to the list of brilliant New Zealand exports (Finn, Finn, Jackson, Clement and McKenzie, etc.), you can happily add "vegan meringues — from a packet mix!" Praise be to their creator, Alice Leonard of Angel Food. I bought a packet at the Cruelty Free Festival a couple of months ago, and made up a first batch this afternoon. Delightful!

i just had a look on the angel foods site - amazing! i'm going to track down a packet and go wild! what is the texture of the meringues like?

Philippa and DJ, I can't recommend this stuff highly enough. Very sweet and light and airy. I'm looking forward to trying out the marshmallow mix... clearly there is some weird vegan voodoo involved!

I've been wondering where you've been! And we should organise a meet up for Suveran, try out the rest of their raw offerings. I need another raw fudy wudgy slice thingo, stat!
And I have a packet of the meringue mix in the pantry, I should use it before it expires like my packet of marshmallow mix did, oops!
