Summer Coda: Pineapple Cupcakes

Well, that was summer again. The season least conducive to baking things. But these had to be done: the VCTOTW Pineapple Right-Side-Up Cupcakes. Even simpler than the recipes for vanilla or chocolate, and supremely delicious. When it came to the pineapple pieces in the cake, I didn't have a blender to use... by which I mean I have one, but it was way up the back of the cupboard, plus I thought I would save myself the washing up. But the texture was still lovely — the canned pineapple was pretty finely crushed to begin with.

A question: Where does one find maraschino cherries in Sydney these days? I don't think they're absolutely necessary, but I did look in a few places and failed to find any.

These look brilliant - and the bright red cherries remind me of the proper, glamorous pineapple-upside-down cakes of my youth!
