Vegan Banana Bread

I usually like to post these things on the day I bake them, or at least on the next day. But life happens — not least, Stevie Wonder concerts happen, like they did last night (and yes, it was brilliant!) So here now is a pic of something I made two days ago.

There are few vegan foods I find less palatable than very ripe bananas. The pungent aroma, the squishiness... just awful. Once the skin has no hint of green, it's too late for me. So with a few black-spotted-ripe bananas sitting in the fruit bowl, I had my motive to find a way of dealing with them (other than delivering them to the bin), and I found this recipe on the good old Post Punk Kitchen website. The results: delicious!

I probably should have mixed it a little better: the banana ended up more to the bottom, and those look like air pockets to me. But man, did it taste great.

I love banana bread, yours looks yummo! I can't eat over ripe 'narnas either so my solution is to use them in baking too!
